Zesty Walnut Pesto Zoodles

Any type of protein would pair well with this dish. The nutritional yeast is also a great-tasting vegan substitute for protein that is packed with B vitamins and minerals.

For the Zoodles
  1. Use a spiralizer to create zucchini noodles, also known as "zoodles".
  2. Heat a large sauté pan over medium heat. Add the oils and then the zoodles. Cook, stirring often for about 2-3 minutes, then add at least 1 cup of the pesto, more or less to your liking, and toss well to heat through, 2 to 3 additional minutes. Sprinkle each portion with nutritional yeast right before serving.
To make the Walnut Pest:
  1. In a small pan, over medium heat, toast the walnuts, shaking the pan often until fragrant, 2-3 minutes. Combine the toasted nuts, nutritional yeast, herbs, lemon juice, lemon zest, olive oils, and salt and pepper in a food processor. Slowly drizzle in the water while processing until you get a runny consistency.
